Google has finally released Chrome Apps for Macs, which allows you to run various Chrome Apps from your desktop.  Not all apps are supported, you can go here to see which apps are included, but the apps that work allow you to work even if you are disconnected from the internet.  You can work in them and the next time that you go online, they will sync with the cloud and any other computer where you are sign into Chrome.
